In partnership with FaveDiets ( http://www.FaveDiets.com ) recipe site, I continue my series of Super Bowl party recipes. This recipe is also in honor of Scandinavian viewers, especially one from Sweden. I asked what a meal she would like low carb, and she replied “Swedish Meatballs.” I was happy to comply with her request.
This recipe originally came from Alton Brown of Good Eats fame. I had to change a few things from the original, specifically the binder and gravy recipes. I converted it to a pretty good low carb recipe, and even the reported nutrition information at 3.8h net carbs might even be a bit high. One might ask why I used the stand mixer to mix the meat mixture together where others I used my hands or my daughters’ hands, but with this recipe, I wanted to hold the meatballs together. For that they needed to be mixed really well.

1 pound Ground Beef (80%)
1 pound Ground Pork
1 small onion, chopped
1 tsp + Dash Salt
2 Egg Yolks
1/4 cup Parmesan Cheese, grated
1/2 tsp Black Pepper 1/4 tsp Allspice
1/4 Dry Mustard 1/8 tsp Nutmeg
2 TBS Carbquik 1 cup Chicken Broth
1/3 cup Cream 1/3 cup Water
